With the second week of the new season of The Great British Bake Off comes the Fig Rolls technical challenge. While it’s still up for debate if a pastry belongs in the Biscuit Week theme, you can still make these bite-sized treats at home for your bake along. Below are the resources for you to decide exactly which kind of Fig Rolls recipe you want to tackle: the official recipe, Americanized recipe, gluten-free recipe, and more.
In America, Fig Rolls are more commonly known as Fig Bars or by the brand name, Fig Newtons. These are are a very similar but with ingredients and measurements US home bakers will find easier to work with. And, as with most home baked goods, you’ll find the version you make by hand to be far better than the one you find on the store shelf.
GBBO’s Official Fig Rolls Recipe
This week the recipe from Paul (who notes that the dough is a “soft biscuit”). Most of it should be familiar to American home bakers, but I’ve added some notes here to help translate the recipe. For the 200 grams of figs, it’s best to use a digital scale than convert to US cups. A cup is a measurement of volume while gram is a measurement of weight. Since figs won’t fill all the space in a cup (unlike say sugar or water) it’s hard to say how much that would weigh to equal 200 grams.
Muscovado sugar is not commonly used in American baking recipes. While the natural molasses is removed when white sugar is made and added back in to make brown sugar, muscovado sugar is created in a way that retains its natural molasses. This gives it more flavor and texture than the other two commonly used sugars. If you can’t buy it at your local store, you can always always use dark brown sugar which also has a high molasses content.
Stem ginger is candied ginger in its own syrup. You can either make it yourself or order it online. Once you do have it, a “ball of stemmed ginger” is about 2 teaspoons or 20 grams according to Nigella Lawson’s site. If you don’t have access to this specialty ingredient, you could try replacing it with an equal amount of finely grated ginger.
